Fried Green Tomatoes
1/4 c. light mayo
1 Tbsp. fresh lemon juice
1/4 tsp. hot sauce
salt and pepper
In a small bowl mix ingr. and set aside.
1/2 cup all purpose flour
2 large eggs, beaten
1/2 cup cornmeal
1 1/2 tsp. seafood seasoning
2 med. green tomatoes(both ends sliced
off)
Cut each into 4 slices
1/2 cup canola oil
Place eggs, flour and cornmeal each in a
small bowl, and season each with 1/2 tsp. seafood seasoning
Line a large rimmed baking sheet with
paper towels. Working with a few slices at a time, dip tomatoes in
flour, then eggs, and finally cornmeal.
In a large saucepan, heat oil over med.
heat. Working in 2 batches, fry tomatoes until golden brown, about 3
min per side. Transfer to platter, sprinkle with salt and serve
immediately with sauce.
