La Madeleine Tomato Basil
Soup
4 Cups tomatoes(8-10 med size) peeled and chopped or 4 Cups canned
whole tomatoes
4 Cups of tomato juice
12-14 fresh basil leaves chopped, plus additional ones for garnish
1 Cup whipping cream (I used half and half)
1/2 Cup sweet unsalted butter
1/4 tsp black crushed pepper
salt to taste
Combine tomato juices and simmer 30 min. over low heat. Cool slightly,
then blend, add basil and puree.
Return mixture to sauce pan. add cream and butter , stir over low heat
until butter
and cream are incorporated. Stir in salt, pepper before serving.
Garnish with more fresh basil,
Serve with fresh crusty bread
Makes 8 servings.
